Nutrient Dense – Whole Food – Heart Healthy

Breakfast is by far my favorite meal of the day, but also the easiest to slip up on in the health department. With so many processed breakfast foods packed with sugar, simple carbohydrates and saturated fat, it’s no wonder why people often start their day with skyrocketing blood sugar levels that lead to hunger, cravings, fatigue and overeating later in the day. These delicious and heart healthy, whole wheat banana pancakes offer all the joys of a pancake breakfast, without the detour from your healthy eating plan. Enjoy with fresh fruit and almond or peanut butter on top for an extra flavor blast!

 

Ingredients:

  • 1 cup 100% whole wheat flour
  • 2 Tbs. ground flax seed
  • 1 large egg
  • 1 cup milk or almond milk
  • 2-3 bananas mashed (about 1.5 cups)
  • 5 tsp vanilla extract
  • 1 ½ tsp baking powder
  • ¼ tsp salt

 

Directions:

Prep Time: 5 minutes Cook Time: 2-3 minutes each side

  1. In a small bowl, mash the bananas to desired consistency; lumpy or smooth, set aside.
  2. In a medium bowl, mix flour, flax seed, baking powder and salt together.
  3. Add the milk, egg and vanilla extract to the dry ingredients bowl and stir until well mixed. Fold in banana.
  4. Pour ¼ cup of batter per pancake on to a heated griddle, space evenly. Cook pancakes for 2-3 minutes on each side, flipping once. Flip pancakes when bubbles appear evenly and the edges are golden. Enjoy!

Top with bananas, peanut butter, other fresh fruit or whatever healthy deliciousness you like!
